It's About Green Hop Season!

With the 2012 hop harvest quickly approaching, now is the time to reserve your fresh-off-the-vine hops.  These hops will only be available to pre-order for seven weeks.  Once we place our order with Hopunion we will not be able to order extra fresh hops.  The deadline for your order is July 31st.  Our online order form is on our website so you can pre-order with Paypal.  All orders MUST be prepaid.

Green hops are used in a 5 to 1 scale, so if your IPA calls for 2oz of Simcoe, then you will need to use 10oz of Green Simcoe to get similar results.  Because of the nature of these hops, they need to be used immediately upon receipt to ensure freshness, so we will give you heads up on when we expect shipment.

Amarillo® - floral, tropical and citrus tones

Cascade - medium intensity floral and citrus tones 

Centennial - medium intensity, spicy and citrus tones

Citra® - strong citrus, grapefruit, melon, lime, gooseberry, passion fruit, and lycee

Simcoe® - unique pine-like aroma

How To Use Fresh Hops

Fresh or "green" hops are best for late-hopping (flavoring and aroma) because of the great aroma they impart. They also contain a lot of moisture (about 80 percent) and you would have to use a huge amount for bittering. (Use pellets for bittering.) The key to using fresh hops is to use them immediately after harvesting. Be sure to coordinate your brew day with the shipment of the hops which we will give you fair warning about. Don't attempt to substitute fresh hops for kilned hops in a recipe. Use the fresh hops for aroma at a fairly heavy-handed rate, keeping in mind that they have a lot of extra weight because they are moist.
