Everone eyeing up the judges!
Hey guys! Some people were asking me for the recipe I used for the Chili contest. Do with it what you want!
2 - Pounds of 80% Ground Beef
1 - Pound of HOT Italian Sausage (Remove Casing)
3 – 15 oz. Cans of Dark Red Kidney Beans (Rinsed and Drained)
3 – 15 oz. Cans of Pinto Beans (Rinsed and Drained)
2 – 28 oz. Cans of Diced Tomatoes with the juice
1 – 6 oz. Can of Tomato Paste
1 – 6 oz. of Water
1 – Yellow Onion (Chopped, not Diced)
3 – Celery Stalks (Chopped, not Diced)
1 – Green Bell Pepper (Chopped, not Diced)
1 – Red Bell Pepper (Chopped, not Diced)
1 – Tbsp. of REAL bacon pieces
4 – Tsp. of Beef “Better than Bouillon”
3/4 Cups of Oatmeal Stout (Homebrew!)
1/4 Chili Power (Plus more to taste)
1 Tbsp. – Worcestershire Sauce
1 Tbsp. – Minced Garlic
1 Tbsp. – Dried Oregano
2 Tsp. – Ground Cumin
2 Tsp. – Tabasco Sauce
1 Tsp. – Dried Basil
1 Tsp. – Salt (Kosher)
1 Tsp. – Ground Black Pepper
4 Tsp. – Ground Cayenne Pepper
1 Tsp. – Paprika
1 Tsp. – Granulated Sugar
Brown meat and drain extra grease. Throw the rest of the shit in the pot and simmer (covered) for approx. 5 hours. Season to taste with additional Cayenne and Chili Powder. Regulated boil off by (un)covering to get the right consistency.
Chili Powder:
1/3 cup wheat flour
3 TBSP Hot Hungarian Paprika
1 TBSP Cayenne Pepper
2 TBSP Garlic Salt
2 TBSP Chili Powder
1 TBSP Parsley
1 TSP salt/pepper (each)
Ingredients:
1 lb ground beef
1 lb sausage
1 large onion
3 celery stalks
1 green pepper
1 red pepper
3-4 carrots
4 slices bacon
2 cloves garlic
28 oz tomato puree
28 oz diced tomatoes
60-80 oz kidney beans
1. Cook sausage in pan for about 10 minutes. Cut into pieces and set aside
2. Cut all the vegetables into THICK slices.
3. Cook bacon in large pot (Use this for the main pot to cook in)
4. Remove bacon, and cook the vegetables (except onions)in the bacon fat about 5 minutes
5. Add onions, garic and homemadechili powder to the pot, cook 5 minutes
6. Add sausages, cook 10 minutes
7. Add beef and cook till brown
8. Stir in cans of tomatoes. Simmer 20 minutes
9. Drain beans and add. simmer 10 minutes.
Use the largest pot you have! it fills up to the top of mine. Add hot sauce for more heat.
